Breadcrumbs with Sardines and Lemon

  • ¾ cup panko breadcrumbs

  • 2 tsp olive oil

  • 3 sardines from a tin

  • Juice and zest from ½ a lemon

  • ½ tsp apple cider vinegar

  • ½ cup chopped parsley

  • 1 ½ tsp kosher salt


  1. Place a pan over medium-high heat and throw in the olive oil and panko breadcrumbs. Cook until the breadcrumbs are light brown and toasted. Mix panko, lemon juice, lemon zest, sardines, apple cider vinegar, parsley, and salt, together in a bowl, making sure to completely crush the sardines.

  2. Sprinkle over pastas, salads, open faced sandwiches, or anything, really. Enjoy!
