Fire Roasted Red Peppers

Ingredients
2 red bell peppers
½ cup white vinegar
½ cup water
Notes before you begin:
This can either be made on a gas stove with an open flame or in your oven on broil. Both methods work great!
Instructions
Wash your peppers and place them over a flame on high heat using metal tongs. If you are using a broiler, put the peppers on a baking sheet in the oven, leaving the oven open or checking progress every 20 seconds.
Cook peppers on each side until they are entirely blackened. You want to burn them! Once completely cooked, place them in a bowl and cover the top with plastic wrap.
Leave the peppers for 15 minutes. The steam will help loosen the pepper skin. Once they have been steamed, run the peppers under cold water and peel it off.
Slice the pepper into strips and clean off any pith and seeds. Mix the vinegar and water together and store the peppers in the liquid. Use them on sandwiches, in omelettes, or on whatever you like!
