Sun Dried Tomato Mayo



Ingredients

  • ½ cup store bought mayo

  • ½ cup sun dried tomatoes

  • 1 tbsp of the oil the sun dried tomatoes are packed in

  • 1 tbsp capers

  • ½ tsp black pepper, freshly ground

  • 1 tsp apple cider vinegar

  • Kosher salt, to taste


Notes before you begin

  • I am using store bought mayo for this dish. Store bought mayos will have a much longer shelf life and serve as a really good fatty base for experimenting with condiments and flavor combinations.

Instructions

  1. Place capers, sun dried tomato, and sun dried tomato oil, in a food processor. Blend the ingredients for two to three seconds at a time they have been combined into a rough paste (or to your liking).

  2. Mix the sun dried tomato and caper paste with the mayo, apple cider vinegar, and fresh cracked black pepper. Taste and salt to your liking. This goes great on toast with eggs, any sandwich, or in a soup. Enjoy!
