Charred Grapefruit Paloma

Ingredients
3 oz silver tequila
2 oz charred grapefruit juice (You’ll need 2 grapefruits for this. You will definitely have leftover juice but that’s ok! It’s delicious
½ oz lime juice, fresh squeezed
1 oz honey syrup (You’ll need a ½ cup honey and ½ cup water to make this. We’ll get to that later)
Club soda
Salt
Instructions
First make the honey syrup. Place both honey and water in a saucepan and whisk together on medium heat until the honey is entirely dissolved. Set aside and let cool
Cut the grapefruits in half. Place a pan on medium-high heat, wait for it to get hot, then set your grapefruit halves cut side down. Let them sit there until you see a little smoke and check to make sure they are getting charred. This means that the sugars in the grapefruit are caramelizing, getting super rich and delicious. Once evenly browned, remove from heat and repeat the process with the other grapefruit, if need be.
Squeeze the charred grapefruits and set the juice aside.
Using water or some of the grapefruit juice, coat the rim of a tall glass, dip it in salt, and throw in a few big ice cubes.
Pour 2 oz of the grapefruit juice, 3 oz of tequila, 1 oz of the honey syrup, and ½ oz of lime juice into the glass and stir for 10 seconds. Top with soda water and garnish with a small slice of grapefruit. If you want a stronger drink, pour in less soda water. Enjoy!
